YYC Breakfast Drop is run by Rein — an Alberta-born petroleum engineer who left the rig schedule to become a chef. He trained at the Pacific Institute of Culinary Arts in Vancouver, then spent 2022 in Modena at Massimo Bottura's Franceschetta58, the sister restaurant to the three-Michelin-star Osteria Francescana, and worked at Restaurant De Nieuwe Winkel, a two-Michelin-star kitchen in the Netherlands, before coming home to open Apprentice Cafe in Calgary.
The focaccia recipe came back with him. The discipline — the kind that means you can't miss a delivery — came from a decade running engineering projects on schedule. You get both, every weekday morning.
